Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cucumber, diced
  • 1/4 cup tahini dressing


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss chickpeas with olive oil, salt, pepper, and paprika. Spread on a baking sheet.
  3. Bake for 20-25 minutes until crispy.
