Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/2 avocado, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup cucumber, diced
- 1/4 cup tahini dressing
Instructions
- Preheat oven to 400°F (200°C).
- Toss chickpeas with olive oil, salt, pepper, and paprika. Spread on a baking sheet.
- Bake for 20-25 minutes until crispy.
- In a bowl, layer mixed greens, cherry tomatoes, avocado, red onion, and cucumber.
- Top with crispy chickpeas and drizzle with tahini dressing.
- Serve immediately.

- Store leftovers in an airtight container for up to 2 days.
