Description
Crispy air fryer chicken quesadillas loaded with tender chicken, melted cheese, and flavorful spices.
Ingredients
- 2 cups cooked shredded chicken
- 4 medium flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced red onion
- 1 tsp taco seasoning
- 1 tbsp olive oil
- 1/4 cup chopped cilantro (optional)
- Sour cream and salsa for serving
Instructions
- Preheat air fryer to 370°F (190°C) for 3 minutes.
- In a bowl, mix chicken, bell peppers, onion, and taco seasoning.
- Brush one side of each tortilla lightly with olive oil.
- Place two tortillas oil-side down in the air fryer basket.
- Divide chicken mixture and cheese evenly between tortillas.
- Top with remaining tortillas, oil-side up.
- Cook for 4-5 minutes until golden and crispy.
- Flip carefully and cook 2-3 minutes more.
- Cut into wedges and serve with sour cream and salsa.
Notes
- Use rotisserie chicken for faster prep.
- Adjust spice level with more taco seasoning.
- Add jalapeños for extra heat.
- Store leftovers in airtight container for up to 2 days.
