Description
A quick and crispy quesadilla filled with spicy chorizo, melted cheese, and flavorful toppings, all cooked to perfection in an air fryer.
Ingredients
- 4 flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 lb chorizo, cooked and crumbled
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1 tbsp olive oil
- Salt to taste
Instructions
- Preheat air fryer to 375°F (190°C).
- Mix cooked chorizo, onion, bell pepper, cumin, paprika, and salt in a bowl.
- Brush one side of each tortilla with olive oil.
- Place two tortillas oil-side down in the air fryer basket.
- Spread chorizo mixture evenly over tortillas.
- Sprinkle shredded cheese on top.
- Cover with remaining tortillas, oil-side up.
- Cook for 5-7 minutes until golden and crispy.
- Flip halfway through cooking.
- Cut into wedges and serve hot.
Notes
- Use pre-cooked chorizo for faster preparation.
- Add jalapeños for extra heat.
- Serve with sour cream or salsa.
- Check quesadillas frequently to prevent burning.
