Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 2 cups diced apples
  • 1/2 cup brown sugar
  • 1 tsp cinnamon (for topping)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Alternate adding flour mixture and milk to the butter mixture, mixing just until combined.
  5. Fold in diced apples.
  6. Pour half the batter into the loaf pan. Sprinkle with half the brown sugar and cinnamon mixture. Repeat with the remaining batter and topping.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes before transferring to a wire rack.
