Ingredients

  • 2 cans (5 oz each) tuna in water, drained
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/4 cup diced cucumber
  • 1/4 cup diced red onion
  • 1/4 cup diced tomatoes
  • 4 whole wheat tortillas
  • 1 cup baby spinach


Instructions

  1. In a bowl, mix tuna, Greek yogurt, lemon juice, oregano, and black pepper.
  2. Add cucumber, red onion, and tomatoes. Stir gently.
  3. Lay out tortillas and divide spinach evenly among them.
  4. Spoon tuna mixture onto each tortilla.
  5. Fold the sides of the tortilla inward, then roll tightly.
  6. Cut in half and serve immediately.
