These oat flour high-protein cookies are a nutritious and delicious snack packed with protein and fiber. Perfect for a post-workout treat or a healthy dessert.
Ingredients
- 1 cup oat flour
- 1/2 cup protein powder
- 1/4 cup almond butter
- 1/4 cup honey or maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix oat flour, protein powder, baking powder, and salt.
- Add almond butter, honey, egg, and vanilla extract. Stir well.
- Fold in chocolate chips if using.
- Scoop dough onto a lined baking sheet and flatten slightly.
- Bake for 10-12 minutes or until edges are golden.
- Let cool before serving.
Notes
- Store in an airtight container for up to 5 days.
- For vegan cookies, replace egg with a flax egg.
- Adjust sweetness by adding more or less honey.
