Description

A delicious and hearty sandwich filled with roasted vegetables and melted mozzarella cheese.


Ingredients

  • 2 slices of whole grain bread
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced zucchini
  • 1/2 cup sliced eggplant
  • 1/4 cup sliced red onion
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp balsamic glaze (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the bell peppers, zucchini, eggplant, and red onion with olive oil, salt, and black pepper.
  3. Spread the vegetables on a baking sheet and roast for 20 minutes, flipping halfway.
  4. Toast the bread slices lightly.
  5. Layer the roasted vegetables on one slice of bread.
  6. Sprinkle mozzarella cheese on top of the vegetables.
  7. Place the sandwich under a broiler for 2 minutes to melt the cheese.
  8. Drizzle with balsamic glaze if desired.
  9. Top with the second slice of bread and serve warm.

Notes

  • You can add other roasted vegetables like mushrooms or cherry tomatoes.
  • For extra flavor, spread pesto or hummus on the bread before assembling.
  • If you don’t have a broiler, use a panini press or grill the sandwich in a skillet.
