A healthy twist on classic potato wedges by sneaking in carrots and beets for extra nutrients.
Ingredients
- 2 large potatoes
- 1 medium carrot
- 1 small beet
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat air fryer to 400°F (200°C)
- Cut potatoes, carrots, and beets into wedge shapes
- Toss wedges with olive oil and spices
- Arrange in single layer in air fryer basket
- Cook for 15 minutes, flip halfway
- Cook 5-10 more minutes until crispy
Notes
- Cut vegetables similar size for even cooking
- Don’t overcrowd the air fryer basket
- Serve immediately for best texture
