Description
A refreshing and spicy Korean cucumber salad that’s quick to make.
Ingredients
- 2 medium cucumbers, thinly sliced
- 1 tsp salt
- 1 tbsp sugar
- 2 tbsp rice vinegar
- 1 tbsp gochugaru (Korean red pepper flakes)
- 1 tbsp sesame oil
- 1 tsp minced garlic
- 1 tsp grated ginger
- 1 tbsp toasted sesame seeds
Instructions
- Toss cucumber slices with salt and let sit for 10 minutes
- Rinse cucumbers and pat dry
- Mix sugar, vinegar, gochugaru, sesame oil, garlic, and ginger in a bowl
- Add cucumbers to the sauce and toss well
- Sprinkle with sesame seeds before serving
Notes
- Use English or Persian cucumbers for best texture
- Adjust gochugaru amount for preferred spice level
- Serve chilled for maximum refreshment
