Description

A refreshing and spicy Korean cucumber salad that’s quick to make.


Ingredients

  • 2 medium cucumbers, thinly sliced
  • 1 tsp salt
  • 1 tbsp sugar
  • 2 tbsp rice vinegar
  • 1 tbsp gochugaru (Korean red pepper flakes)
  • 1 tbsp sesame oil
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 1 tbsp toasted sesame seeds


Instructions

  1. Toss cucumber slices with salt and let sit for 10 minutes
  2. Rinse cucumbers and pat dry
  3. Mix sugar, vinegar, gochugaru, sesame oil, garlic, and ginger in a bowl
  4. Add cucumbers to the sauce and toss well
  5. Sprinkle with sesame seeds before serving
