Description
A moist and flavorful cake made with sweet potatoes and topped with a honey glaze.
Ingredients
- 2 cups mashed sweet potatoes
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup honey
- 1/4 cup melted butter
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a large bowl, mix mashed sweet potatoes, sugar, oil, eggs, and vanilla.
- In another bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Add dry ingredients to the wet ingredients and mix until just combined.
- Pour batter into the prepared pan and bake for 35–40 minutes or until a toothpick comes out clean.
- In a small bowl, mix honey and melted butter.
- Pour the honey glaze over the warm cake and let it cool before serving.
Notes
- Use freshly mashed sweet potatoes for the best texture.
- Store leftovers in an airtight container for up to 3 days.
