Description

A quick and healthy Thai-inspired wrap with crispy tofu, chickpeas, and fresh veggies.


Ingredients

  • 200g firm tofu, cubed
  • 1 cup cooked chickpeas
  • 1 tbsp soy sauce
  • 1 tbsp peanut butter
  • 1 tsp lime juice
  • 1 tsp sesame oil
  • 1 small carrot, julienned
  • 1/2 cucumber, thinly sliced
  • 2 large whole wheat tortillas
  • Fresh cilantro for garnish


Instructions

  1. Press tofu to remove excess water, then cube.
  2. Heat sesame oil in a pan and fry tofu until crispy.
  3. Add chickpeas, soy sauce, peanut butter, and lime juice. Stir well.
  4. Warm tortillas in a dry pan for 30 seconds.
  5. Fill each tortilla with tofu-chickpea mix, carrots, cucumber, and cilantro.
  6. Fold the tortilla tightly and serve.

Notes

  • Use extra firm tofu for better texture.
  • Substitute peanut butter with almond butter if needed.
  • Add chili flakes for extra heat.
