Description
A quick and healthy Thai-inspired wrap with crispy tofu, chickpeas, and fresh veggies.
Ingredients
- 200g firm tofu, cubed
- 1 cup cooked chickpeas
- 1 tbsp soy sauce
- 1 tbsp peanut butter
- 1 tsp lime juice
- 1 tsp sesame oil
- 1 small carrot, julienned
- 1/2 cucumber, thinly sliced
- 2 large whole wheat tortillas
- Fresh cilantro for garnish
Instructions
- Press tofu to remove excess water, then cube.
- Heat sesame oil in a pan and fry tofu until crispy.
- Add chickpeas, soy sauce, peanut butter, and lime juice. Stir well.
- Warm tortillas in a dry pan for 30 seconds.
- Fill each tortilla with tofu-chickpea mix, carrots, cucumber, and cilantro.
- Fold the tortilla tightly and serve.
Notes
- Use extra firm tofu for better texture.
- Substitute peanut butter with almond butter if needed.
- Add chili flakes for extra heat.
