Ingredients

  • 1 cup cottage cheese
  • 1/2 cup fresh blueberries
  • 1 egg
  • 1/4 cup flour
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt


Instructions

  1. Mix cottage cheese, egg, honey, and vanilla in a bowl.
  2. Add flour, baking powder, and salt. Stir until combined.
  3. Gently fold in blueberries.
  4. Preheat air fryer to 375°F (190°C).
  5. Scoop small portions of batter onto parchment-lined air fryer basket.
  6. Cook for 8-10 minutes until golden brown.
  7. Flip halfway through cooking.
  8. Serve warm with extra honey if desired.
