Description
A quick and healthy pizza alternative using eggplant as the base, topped with an Asian-inspired glaze and your favorite toppings.
Ingredients
- 1 medium eggplant, sliced into 1/2-inch rounds
- 1 tbsp olive oil
- 1/4 cup hoisin sauce
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 clove garlic, minced
- 1/2 tsp grated ginger
- 1/4 cup shredded mozzarella cheese
- 1 tbsp chopped green onions
- 1 tsp sesame seeds
Instructions
- Preheat air fryer to 375°F (190°C).
- Brush eggplant slices with olive oil and air fry for 8 minutes, flipping halfway.
- Mix hoisin sauce, soy sauce, sesame oil, garlic, and ginger in a bowl.
- Spread glaze over eggplant slices.
- Sprinkle cheese on top and air fry for 3 more minutes.
- Garnish with green onions and sesame seeds before serving.
Notes
- Use firm eggplant for best results.
- Adjust glaze thickness with water if needed.
- Add toppings like bell peppers or mushrooms if desired.
