Description
A quick and easy Greek pasta salad made in the air fryer. Perfect for a light lunch or side dish.
Ingredients
- 2 cups cooked pasta
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 350°F (175°C).
- In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to coat evenly.
- Transfer the salad to an air fryer-safe dish and cook for 5 minutes.
- Remove from the air fryer, let cool slightly, and serve.
Notes
- Use gluten-free pasta if needed.
- Add grilled chicken for extra protein.
- Store leftovers in an airtight container for up to 2 days.
